Sopapillas

Makes 3 dozen

Ingredients

¼ C Lukewarm H2O

3½ t

yeast
1 egg 
1½ C milk
⅓ C melted butter
⅓ C sugar
1 t salt
1 T corn meal
5 C flour
  peanut oil

Dough Preparation

  1. Mix H2O & yeast in blender
  2. Blend in rest of ingredients except the 3 C of flour
  3. Put dough in large bowl & let sit in warm place for 1 hour
  4. Adding remaining flour, need to soft dough
  5. Cover & let raise till double
  6. Push down and store in plastic bags in the refrigerator. You can cut into four equal portions (use one and freeze the other three).
  7. Dough will keep in refrigerator a few days, or can be frozen.

Cooking Preparation

  1. Roll a 12" circle of dough about 1/8" thick. 
  2. Cut into 3" triangles or squares.
  3. Fry in peanut oil till golden and puffy.
  4. serve with honey & butter
